"Busiate". They take their name from busa, the Sicilian word for the stem of Ampelodesmos mauritanicus, a local grass, which is used in preparing them and giving them their helical shape. This pasta is so flavorful that you can actually taste the sweetness of the wheat. A pasta so full of Sicilian history, culinary traditions, and aromas that it provides the next best experience to being in Sicily. They a rich, nutty flavor and an out-of-this-world rough, porous texture. To encourage all their personality to shine, we love to serve them with just a drizzle of extra virgin olive oil. By not using preservatives there is no presence of heavy metals. The result is a GranoSalus wheat. The hot and dry temperatures in Southern Italy, allows to avoid using mycotoxins and glyphosate the use of certified drinking water, the slow bronze-die extrusion guarantees density and roughness, the natural drying in special drying cells keeps the nutritional values unaltered and makes it highly digestible as well.
