Tomatoes are a wonderful vegetable, its divine taste has always been appreciated and the tomatoes growing in Sicily are the best. They are let dry in the sun then processed, only when they have absorbed all the flavour of the end-of-summer sunshine. They are soaked in water to soften, then dried and seasoned with garlic and oregano, extra virgin olive oil and a pinch of salt and sugar. Use straight from the jar or toss on a mixed salad, burrata, mozzarella, crispy bread and focaccia. Ingredients: dried tomatoes 60%, extra virgin olive oil 38%, garlic, oregano, citric acid.
