Know your tea: 

This Laoshan Village "Pine Needles" Green Tea is incredibly bright and sweet.  A most unique process that involves pan-frying, rolling, and drying in a wok all by hand, gives this tea an incredibly thick, bright and viscous tea liqueur, offering a sweet, umami, and satisfying Cha Qi with a long finish.

Laoshan village is near Qingdao in the province of Shandong at an altitude of just 300 meters, near a sacred mountain, and not far from the ocean.

Our Laoshan teas are grown by the Liang family, and they process all of the tea themselves as well.  This tea is grown under the cover of greenhouses which are fully covered in the Winter and the earliest part of Spring when the leaves are just being to sprout, to protect from frost.  In the middle and later part of the first flush growth stage, the coverings are removed and the tea bushes grow in full view of the sun until being plucked in the first week of April.

Tasting Notes: Roasted chestnuts, nori, crispy roasted peas, green peas, lemongrass roots. 

Liqueur Body: bright, medium-bodied.

Preparation

We encourage you to experiment with the amount of leaves, amount and temperature of the water, and infusion times to reach your preferred strength of tea,  but here's a suggestion for this particular tea:  

2 grams per 120 mls of water at 80 degrees. Time the first infusion for 2.5 minutes, and subsequent ones for 2 minutes at a time. Reinfuse 3-4 times. 

Pro Tip: 

Rinse your tea before the first infusion, to 'awaken' the leaves. You can do this by just submerging the leaves in warm water at the prescribed temperature for each particular tea, and then discarding that water. This will also preheat the vessel and prevent the water temperature from drastically falling during the infusion. 

Most reinfusions require the same or higher temperatures than the first infusion because the leaves will already be moist, but the time for each reinfusion will first reduce till a certain number of reinfusions, and then it will need to be increased till you've maxed out the potential of the leaves.
