Passionate about food from an early age, Roberto’s father ignited his love for Peruvian food. Straight from high school Roberto lands his first job as a chef in one of Lima’s top Peruvian eateries, Bravo Restobar.

After a few formative years, Roberto’s travels take him outside of Peru, where he finds himself working with household names such as Christian Bravo and Richard Sandoval, gaining unparalleled fine dining experience.

Landing in Dubai, he quickly puts his creative flair to good use, as Executive Chef of The Act, a theatric dinning experience. Soon after, He launches Waka, a Japanese Peruvian concept, critically acclaimed and Craft Café, a down to earth eatery.

Along the journey, Roberto picks up a few personal awards (4) and launches his own hospitality consulting firms.

Today, Roberto is considered one of the most prolific Chefs in the region’s culinary scene.His latest outlet, Tabu, an avant-garde dining experience is considered one of the top dining destinations in Dubai.
