Dine & Design: a new concept unveiled by Chef Alessandro Miceli at the Fuori Salone in Milano

Chef Alessandro Showcases his Dine & Design concept at the Fuori salone in Milano in June 2022

Unveiled at Milan's Design week 2022, "Dine & Design" is a culinary design collaboration between Chef Alessandro Miceli and Architect Clara Voce. The primary objective is to apply architectural logic, structure, and mechanisms to food-making, and give the consumer a transparent overview of what's on the plate.

Food & Architecture have become much more intertwined of late, with the explosion of the HORECA market, with hundreds of billions of dollars spent annually as capital investments for the planning, design, and building of restaurants around the world. 

Designing for Food

Today, It is customary for Architects and Chefs to work together when creating a new restaurant, as it is impossible to design a kitchen without knowing and understanding the output required: What is the culinary concept& origin? How large is the menu? What dishes are we looking to execute? Do we need a traditional oven? These questions and much more need to be answered before undertaking a kitchen buildup.

Architect Clara Voce & Chef Alessandro Miceli wanted to take this one step further with a creative showcase that brings together architecture and food. Showcased with a Dinner and a uniquely designed menu called "A Fresh Sicilian Summer", each guest is presented with a "technical card" that explains the idea behind the dish, the ingredients and their origins, and the preparation techniques used.

In the kitchen as in design, the future lies in traceability, transparency, and originality, ideals that where very apparent in the dishes and menu presented, to the benefit of critics and guests present.
